We’ve been relatively spoiled this week in Denver, with temperatures hovering around 40 degrees. Meanwhile, the East Coast has morphed into an apocalyptic frozen tundra, so I imagine those of you across the country might be craving some hot meals to warm your insides and please your tummy. Truly, I love making soup. I love the prep work, I love the smells that fill the house, I love feeling domestically cliché, I love that most soups pair perfectly with garlic bread, and I love the ease of heating up leftovers the next day! These are some of my favorite rich, filling, and comforting recipes (note: many of them involve cashew cream- my favorite secret ingredient for decadence!):
#1) Roasted Corn Chowder
#2: Chickpea and Rice Soup with a Little Kale
#3: New England Vegan Chowder
#4: Mushroom Hot Pot
#5: Vegan Cream of Mushroom Soup
#6: Cheesy Broccoli Soup
#7: Loaded Potato Soup
#8: Ginger + Lemongrass Thai Soup with Crispy Tofu & Wild Rice

Omg that ginger lemongrass soup looks incredible. I see you (like me) are a big Isa Chandra fan too. Thanks for sharing!
It takes all my self discipline to not just list every single one of her recipes on every page!
Completely relate!
